  • 1 kg of Tuscan sausage Friato;
  • 50 g of l'ancienne mustard;
  • 1 kg of onion cut into small cubes;
  • 50 g of butter;
  • 1 kg of wheat flour.
  • Breaded
  • 500 g of flour;
  • 50 g of breadcrumbs;
  • 1 beaten egg.
  • Sauce
  • 1/2 liter of cream;
  • 200 g of dijon mustard;
  • 200 grams of mustard a l'ancienne.

  1. Start by removing the Friato Tuscan sausage from the gut.
  2. Heat a pan, add the butter, onion and sausage and cook until the liquid that forms in the pan dries.
  3. Then add the mustard and flour and cook for another 10 minutes.
  4. Wait for it to cool down.
  5. In the meantime, you can go on making the sauce.
  6. Put the cream in a saucepan to boil, mix the mustards and boil for another 5 minutes.
  7. To make the croquettes, take the already cold dough, pass it in the wheat flour, the egg and then in the breadcrumbs.
  8. Once this is done, just fry in oil by immersion at a temperature of 180 ° C and serve with the sauce you prepared.
