Cold Barbecue Sausage Casserole with Cheese and Potatoes

Ingredients

List

  • 600g of potatoes,
  • peeled and diced;
  • 500g of Cold Barbecue Sausage;
  • 1 onion, cut into cubes;
  • 1 red pepper, cut into cubes;
  • 3 chopped garlic cloves;
  • 200g of sliced ??cheese;
  • 6 eggs;
  • 80ml of milk;
  • ¼ teaspoon of black pepper;
  • Sliced ??green onion.
  • Salt to taste.

Preparation

Mode

  1. Preheat the oven to 190ºC.
  2. Cook the potato cubes in boiling salted water for about 5 minutes.
  3. Drain and let cool.
  4. Remove the sausage cover.
  5. Heat a frying pan over medium-high heat and cook the sausages and chop them during preparation until golden.
  6. Cook the onion and red pepper.
  7. Add the garlic and cook a few more minutes.
  8. Place in a large baking dish along with the sausage and potato cubes.
  9. In a bowl, mix the eggs, milk and black pepper and pour into the cooking dish.
  10. Add 150g of grated cheese and stir to combine everything.
  11. You don't need salt because of all the cheeses, but feel free to add!
  12. Sprinkle the remaining cheese on top,
  13. cover with foil and bake for 20 minutes.
  14. Remove the foil and continue cooking for another 10-15 minutes.
  15. Remove from the oven and let the casserole rest for 5 minutes.
  16. Add the green onions and serve!
